Using Markets to Promote a Healthy Dietary Transition
Improved diets imply increases in diet diversity and consumption of nutrient rich foods. However, these foods face distinct value chain challenges, including perishability and food safety risks, but also market failures related to lack of information and weak transportation infrastructures. Market orientation and connecting diverse production systems and farmers to markets are prerequisites to production and consumption of nutrient rich foods. Value chain approaches may support multi-disciplinary, multi-stakeholder and partnership driven research to enhance nutrition and health outcomes for vulnerable groups.
