Using Value Chains to Leverage Food Safety in Informal Markets
The great majority of the poor in developing countries buy and sell nutrient rich foods in informal (wet) markets. These products are also high risk products in terms of food safety. Conventional food safety regulation has largely failed in these informal markets. New approaches to food safety should include risk-based methods focusing on human health outcomes instead of presence of hazards. Participatory and multi-disciplinary value chain research should shift from “control and command’’ to “incentive-based’’ food safety systems.
